Today is Taco Tuesday! These soft, corn tortillas are filled with potato and chorizo come from Hoboken’s Taco Truck Shop.

The Taco Truck started off as one might expect: as a truck. Last year a Hoboken storefront was opened and recently a second truck was launched in Boston.
